Good things don’t last, and neither does the bright green colour of your guacamole in the fridge.
After buying avocados and preparing a batch, it is incredibly frustrating to hesitate over a brown surface. Throwing some away does not only waste a part of the money you spent, but also the resources used to grow, transport and store the fruit. Understanding the colour change, and how to slow it, can therefore help us examine when preservation is worth its environmental costs.
This colour change occurs via a process called enzymatic browning that relies on the catalytic activity of polyphenol oxidase (PPO) on its many phenolic substrates in the presence of oxygen (Peres et al. 2019). PPO and phenolic compounds are usually separated within cells; PPO is associated with plastids, while phenolics are stored in vacuoles (Peres et al. 2019). When you cut or mash an avocado, this natural compartmentalization is disrupted, allowing PPO to contact its substrates. PPO then catalyzes the oxidation of these phenolic compounds into quinones, which undergo further reactions to form the brown pigments that inevitably discolour your guac (Figure 1; Peres et al. 2019).

Keeping your guac green, then, means interfering with this process before brown pigments form. Pressing food wrap directly against the surface limits contact with oxygen, a reactant in the browning process (Schwarcz 2017). Refrigeration can also slow enzymatic browning by reducing PPO activity at lower temperatures (Soliva-Fortuny et al. 2002). A squeeze of lemon juice demonstrates another approach: its acidity can reduce PPO activity, while its vitamin C acts as a reducing agent, converting newly formed quinones back into phenolic compounds before brown pigments develop (Schwarcz 2017).
However, slowing down a reaction does not automatically reduce the environmental harm. Wrapping adds disposable and often unrecyclable material, while refrigeration requires energy. Whether that investment is worthwhile depends on how much food it prevents us from wasting. A life-cycle assessment helps to compare impacts across a product’s life, including production and disposal.
In a retail packaging study, Heller and Keoleian (2017) found that the waste reduced by adding additional packing to mushrooms outweighed its impacts on greenhouse gas emissions, as well as energy demands. For spinach, waste also fell, but not enough to offset the additional packaging impacts (Heller and Keoleian 2017). Although these findings are not directly applicable, they show that reducing food waste does not necessarily outweigh the added impacts of preservation.
This distinction brings us back to the bowl in the fridge. If preserving helps you finish a batch that you would otherwise throw out, then those additional inputs may be worthwhile. However, if the guacamole ends up in the bin anyway, what’s the point? Whether preservation is worth it depends on what it saves, what it consumes, and whether the guacamole actually gets eaten at the end of the day.
